STATHAM ESTATE
A complex dessert wine made from the Pinot Grigio grape. Components of this blend were left to hang, as fruit, on the vine by cutting the vines cordon.
VINTAGE Fruit set and healthy vines with strong canopies to help ripen, were
evident this growing season. The summer was moderate and consistent,
producing a steady ripening period. Fruit quality was high. We have
three pinot grigio sections in our vineyard. Two of the sections had their
cordons cut and were left to hang and ripen to the required flavor levels.
The third section was harvested at 13.5 baume to keep fresh fruit flavours
and zippy acidity in the finished wine.
WINEMAKING Once the perfect flavours were tasted and the grapes reached their
optimum flavor profiles in the three vineyard sections, they were then
hand harvested. Each parcel was treated separately in the winery. The
fruit parcels were whole bunched pressed. After pressing, the juice was
cold settled until clear and then racked off to fermentation. Cool
fermentations and aromatic yeast helped enhance all the aroma’s and
flavours of these three parcels. During fermentation our Winemaker
continually tasted the ferments to find the balance between the flavours,
the sugar, the acidity and the alcohol. Once this balance was found the
ferments were stopped in their tracks the wines were cleaned up and the
perfect blend was created.
TASTING NOTE This wine style displays aromas of rose petal, jasmine florals, pear and
spice. Flavours of nashi pear, melon, rose petals, soft honey and fleshy
pink lady apples. Elegance of flavours, with a delicate balanced acidity
compliments the viscous nature of this wine.
